Description

Hunter’s Chicken, also known as Chicken Chasseur, is a delicious and hearty dish featuring chicken thighs cooked in a savory sauce with mushrooms, onions, and white wine.


Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are browned.
  4. Stir in the chicken broth, white wine, tomato paste, and dried thyme. Bring the mixture to a simmer.
  5. Return the chicken thighs to the skillet, skin-side up. Cover and simmer on low heat for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  6. Remove the skillet from heat and let it rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For a creamier sauce, stir in 1/4 cup heavy cream just before serving.
  • You can substitute the white wine with additional chicken broth for a non-alcoholic version.
