Description

Few desserts can rival the indulgence of this Homemade Mint Chocolate Dream Cake. With moist chocolate layers, bursts of mint chocolate chips, and a fluffy whipped cream topping, this cake is a treat for any celebration or simply to satisfy your sweet cravings. Topped with colorful M&M’s, it’s as delightful to look at as it is to eat.

Ingredients

Dry Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt

Wet Ingredients:

  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

Add-Ins and Toppings:

  • 1 cup mint chocolate chips
  • 2 cups whipped cream
  • 1 cup M&M’s

Instructions

Preheat and Prepare:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

2. Mix the Dry Ingredients:

In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

3. Add the Wet Ingredients:

Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed until the batter is smooth and fully combined.

4. Incorporate Boiling Water:

Slowly add the boiling water to the batter while stirring. The batter will be thin, which ensures a moist and tender cake.

5. Fold in Mint Chocolate Chips:

Gently fold in the mint chocolate chips, ensuring they are evenly distributed throughout the batter.

6. Bake the Cakes:

Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

7. Assemble the Cake:

Place one cooled cake layer on a serving plate. Spread a generous layer of whipped cream on top. Add the second cake layer and frost the entire cake with the remaining whipped cream.

8. Decorate with M&M’s:

Sprinkle M&M’s over the top and sides of the cake. For a fun design, arrange the M&M’s in patterns or use them to spell out a message.

9. Serve and Enjoy:

Slice the cake and serve to your guests for a delightful treat. Store any leftovers in the refrigerator.
