Ingredients

For the Pico de Gallo:

  • 1 medium tomato, diced
  • 1 small jalapeño pepper, seeded and diced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

For the Breakfast Bagel:

  • 8 slices thick-cut bacon
  • 1 pound ground pork sausage
  • 4 slices sharp cheddar cheese
  • 4 large eggs
  • 1 tablespoon unsalted butter
  • 4 onion bagels, split and toasted
  • ½ cup cowboy butter (softened)
  • Salt and pepper to taste

Instructions

  1. Make the Pico de Gallo:
    • Combine the diced tomato, jalapeño, lime juice, salt, and pepper in a small bowl. Mix well and set aside in the refrigerator.
  2. Prepare the Bacon:
    • Preheat the oven to 400°F (205°C).
    • Place bacon slices on a foil-lined baking sheet and bake for 15-20 minutes until crispy. Drain on paper towels.
  3. Cook the Sausage Patties:
    • Divide the ground sausage into four equal portions and shape into patties slightly larger than the bagel diameter.
    • Heat a skillet over medium heat and cook the patties for 3-4 minutes per side until browned and fully cooked (internal temperature of 160°F).
    • Place a slice of cheddar cheese on each patty while still warm to melt.
  4. Fry the Eggs:
    • In the same skillet, melt the butter over medium heat. Fry the eggs to your preferred doneness and season with salt and pepper.
  5. Toast the Bagels:
    • Toast the split bagels until golden and crispy.
  6. Assemble the Bagels:
    • Spread a generous layer of cowboy butter on both halves of the bagels.
    • On the bottom half, layer a sausage patty, 2 slices of bacon, a fried egg, and a spoonful of pico de gallo.
    • Top with the remaining bagel half and press gently to secure.
