Ingredients
For the Pico de Gallo:
- 1 medium tomato, diced
- 1 small jalapeño pepper, seeded and diced
- 1 tablespoon lime juice
- Salt and pepper to taste
For the Breakfast Bagel:
- 8 slices thick-cut bacon
- 1 pound ground pork sausage
- 4 slices sharp cheddar cheese
- 4 large eggs
- 1 tablespoon unsalted butter
- 4 onion bagels, split and toasted
- ½ cup cowboy butter (softened)
- Salt and pepper to taste
Instructions
- Make the Pico de Gallo:
- Combine the diced tomato, jalapeño, lime juice, salt, and pepper in a small bowl. Mix well and set aside in the refrigerator.
- Prepare the Bacon:
- Preheat the oven to 400°F (205°C).
- Place bacon slices on a foil-lined baking sheet and bake for 15-20 minutes until crispy. Drain on paper towels.
- Cook the Sausage Patties:
- Divide the ground sausage into four equal portions and shape into patties slightly larger than the bagel diameter.
- Heat a skillet over medium heat and cook the patties for 3-4 minutes per side until browned and fully cooked (internal temperature of 160°F).
- Place a slice of cheddar cheese on each patty while still warm to melt.
- Fry the Eggs:
- In the same skillet, melt the butter over medium heat. Fry the eggs to your preferred doneness and season with salt and pepper.
- Toast the Bagels:
- Toast the split bagels until golden and crispy.
- Assemble the Bagels:
- Spread a generous layer of cowboy butter on both halves of the bagels.
- On the bottom half, layer a sausage patty, 2 slices of bacon, a fried egg, and a spoonful of pico de gallo.
- Top with the remaining bagel half and press gently to secure.
