Description

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder

  • ½ teaspoon salt
  • 1 large egg
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • ½ cup cocoa powder (for frosting)
  • 4 tablespoons heavy cream (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 cups semi-sweet chocolate chips (for coating)
  • 2 tablespoons vegetable oil (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard cupcake pan with paper liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the egg, milk, vegetable oil, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Gradually stir in the boiling water until the batter is smooth.
  6. Fill each cupcake liner about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool completely.
  9. For the frosting, beat the softened butter in a large bowl until creamy.
  10. Gradually add the powdered sugar and cocoa powder, mixing until combined.
  11. Add the heavy cream and vanilla extract, then beat until the frosting is light and fluffy.
  12. Once the cupcakes are cool, use a piping bag to swirl the frosting on top of each cupcake, creating a tall mound.
  13. For the chocolate coating, melt the chocolate chips and vegetable oil together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  14. Dip each frosted cupcake into the melted chocolate, allowing any excess to drip off.
  15. Place the cupcakes on a wire rack to set.
