Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 bell pepper, diced (any color)
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • 1 cup fresh spinach, roughly chopped
  • 1 tablespoon balsamic vinegar
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the carrots, celery, zucchini, and bell pepper to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables begin to soften.
  4. Add the green beans, diced tomatoes (with juices), vegetable broth, basil, oregano, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low and let the soup simmer for 20-25 minutes, or until all the vegetables are tender.
  6. Stir in the frozen peas and fresh spinach, and cook for an additional 5 minutes until the spinach is wilted.
  7. Add the balsamic vinegar and stir to combine. Taste and adjust seasoning if necessary.
  8. Serve hot, topped with grated Parmesan cheese if desired.
