  • 1 pound lean ground turkey
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 2 cups salsa
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Cook the Ground Turkey:
    • Heat a frying pan over medium heat. Add the ground turkey and cook until browned, breaking it into crumbles as it cooks.
    • Drain any excess grease, then stir in the taco seasoning to evenly coat the turkey.
  3. Prepare the Filling:
    • Add salsa, black beans, corn, and 1 cup of shredded cheese to the cooked turkey. Stir until well combined.
  4. Assemble the Casserole:
    • Spread the crushed tortilla chips evenly across the bottom of the prepared baking dish.
    • Pour the turkey mixture over the chips and spread it out in an even layer.
    • Sprinkle the remaining 1 cup of shredded cheese on top.
  5. Bake the Casserole:
    • Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
