- 2 cups shredded Mexican cheese blend
Optional Toppings:
- Green onions, finely chopped

- Sliced olives
- Shredded lettuce

Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray to prevent sticking.
- Cook the Ground Turkey:
- Heat a frying pan over medium heat. Add the ground turkey and cook until browned, breaking it into crumbles as it cooks.
- Drain any excess grease, then stir in the taco seasoning to evenly coat the turkey.
- Prepare the Filling:
- Add salsa, black beans, corn, and 1 cup of shredded cheese to the cooked turkey. Stir until well combined.
- Assemble the Casserole:
- Spread the crushed tortilla chips evenly across the bottom of the prepared baking dish.
- Pour the turkey mixture over the chips and spread it out in an even layer.
- Sprinkle the remaining 1 cup of shredded cheese on top.
- Bake the Casserole:
- Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Add Fresh Toppings:
- Once the casserole is out of the oven, top it with your choice of fresh toppings such as green onions, diced tomatoes, olives, shredded lettuce, extra salsa, and sour cream.
- Serve and Enjoy:
- Scoop the casserole into bowls or onto plates. Pair it with a side of guacamole or a simple salad for a complete meal.
Notes
- Opt for fresh salsa and high-quality taco seasoning for the best flavor.
- Add a pinch of cayenne pepper or diced jalapeños for extra heat.
- To keep the chips crispy, serve immediately after baking.
