Ingredients
For the Steak:
- 1 lb flank steak or sirloin
- 1 tbsp cornstarch
- 3 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 1 tsp ginger powder
For the Stir-fry:
- 2 tbsp sesame oil
- 1/4 cup diced onions
- 1/8 cup diced garlic
- 1/8 cup diced ginger
- 16 oz noodles (spaghetti or lo mein)
- 16 oz broccoli florets
For the Sauce:
- 3/4 cup dark soy sauce (low sodium)
- 1/2 cup honey or brown sugar
- 1/2 cup oyster sauce
- 1/8 cup rice vinegar
- 1 tbsp browning (optional for color)
For the Cornstarch Slurry:
- 2 tbsp cornstarch
- 2 tbsp water
Instructions
- Cook the Noodles:
Cook noodles according to package instructions. Drain well, toss with a little sesame oil to prevent sticking, and set aside. - Prepare the Sauce:
In a small bowl, whisk together soy sauce, oyster sauce, honey, and rice vinegar. In another bowl, mix cornstarch and water to create a slurry. Add this to the soy sauce mixture and set aside. - Season the Beef:
In a bowl, combine flank steak with soy sauce, cornstarch, rice wine vinegar, and ginger powder. Let it marinate for a few minutes. - Cook the Beef:
Heat a wok or large skillet over high heat, add sesame oil, and sear the marinated beef until cooked to your preference. Remove from the pan and set aside. - Stir-fry Vegetables and Noodles:
In the same wok, add more sesame oil if needed. Stir-fry onions, garlic, and ginger until fragrant, then add broccoli and cook until tender-crisp. Add noodles and stir-fry on high heat. - Combine Everything:
Gradually add the sauce to the wok, stirring constantly. Return the beef to the pan and mix everything until evenly coated and heated through.
Notes
- Choosing the Right Beef: Flank steak or sirloin work best for stir-frying. Slice thinly against the grain to keep it tender.
- Noodles: Use traditional lo mein noodles or opt for whole grain spaghetti for a healthier option.
- Stir-frying Tip: High heat and constant movement are key to a quick cook and great texture. Avoid overcrowding the pan.
