Description

Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 8 ounces mushrooms, halved
  • 3 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat. If using a grill basket, place it on the grill to heat up as well.
  2. In a large bowl, combine the zucchini, yellow squash, bell peppers, red onion, and mushrooms.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, oregano, salt, and black pepper.
  4. Pour the olive oil mixture over the vegetables and toss until they are evenly coated.
  5. If using a grill basket, transfer the vegetables to the basket. If not, place the vegetables directly on the grill grates.
  6. Grill the vegetables for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
  7. Remove the vegetables from the grill and let them cool slightly. Garnish with fresh parsley before serving.
