Description
A delicious and healthy grilled vegetable medley that is perfect for summer barbecues or as a side dish.
Ingredients
- 2 medium zucchini, sliced into 1/4-inch rounds
- 2 medium yellow squash, sliced into 1/4-inch rounds
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 8 ounces mushrooms, halved
- 3 tablespoons olive oil
- 2 teaspoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium-high heat. If using a grill basket, place it on the grill to heat up as well.
- In a large bowl, combine the zucchini, yellow squash, bell peppers, red onion, and mushrooms.
- In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, oregano, salt, and black pepper.
- Pour the olive oil mixture over the vegetables and toss until they are evenly coated.
- If using a grill basket, transfer the vegetables to the basket. If not, place the vegetables directly on the grill grates.
- Grill the vegetables for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
- Remove the vegetables from the grill and let them cool slightly. Garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the vegetables in the olive oil mixture for 30 minutes before grilling.
- Experiment with different vegetables such as asparagus, eggplant, or cherry tomatoes for a unique twist.
