Description

This simple yet flavorful one-skillet dish brings together savory ground beef, sweet cabbage, and a burst of fresh dill and lemon. Served over warm rice, it’s an easy, nourishing meal that tastes like a trip to the Mediterranean coast!


Ingredients

2 tablespoons olive oil
½ yellow onion, diced
2 garlic cloves, minced
1 pound lean ground beef (90–93%) Kosher salt,
to taste Freshly ground black pepper, to taste
2 teaspoons dried oregano ½ small green cabbage, chopped (about 3 cups)
½ cup fresh dill, chopped (including stems) Juice from
½ lemon Cooked long-grain white or brown rice, for serving


Instructions

  • Cook the Aromatics:
    Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 4–6 minutes until softened. Stir in garlic and cook for another minute.

  • Brown the Beef:
    Push the onions to one side of the skillet and add the ground beef. Season with salt and pepper. Let it cook undisturbed for 3–5 minutes to develop a crust, then break it apart and stir until browned.

  • Add Seasoning and Cabbage:
    Sprinkle in dried oregano and add the chopped cabbage. Stir to combine, then cover and cook until the cabbage wilts, stirring occasionally. If there’s excess liquid, uncover and simmer for a few extra minutes to reduce it.

  • Finish the Dish:
    Remove from heat and stir in the chopped dill and lemon juice. Taste and adjust seasoning as needed.

 

  • Serve:
    Spoon over bowls of cooked rice and top with extra black pepper if desired.

Notes

  • For a low-carb version, skip the rice or serve over cauliflower rice.

  • You can swap fresh dill for parsley or mint for a different herb profile.

  • Add a dollop of plain Greek yogurt for extra creaminess and tang.
