Ingredients
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 lb potato gnocchi
- 6 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried Italian herbs
- Salt and pepper to taste
- Fresh basil leaves (for garnish)
- 2 cups fresh spinach
Instructions
- Cook the Chicken
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet and season with salt, pepper, and dried Italian herbs.
- Cook for 6–8 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- Sauté the Garlic
- In the same skillet, add the minced garlic.
- Sauté for about 30 seconds until fragrant, being careful not to burn it.
- Deglaze the Pan
- Pour the chicken broth into the skillet and use a wooden spoon to scrape up any browned bits from the bottom.
- These add incredible depth of flavor to your sauce.
- Cook the Gnocchi
- Add the potato gnocchi to the skillet with the chicken broth.
- Bring to a simmer and cook for 3–4 minutes, stirring occasionally, until the gnocchi begins to soften.
- Make the Creamy Sauce
- Reduce the heat to medium-low and pour in the heavy cream.
- Stir gently to combine, allowing the sauce to simmer for 2–3 minutes until it thickens slightly.
- Combine Ingredients
- Return the cooked chicken to the skillet along with the grated Parmesan cheese.
- Stir everything together until the cheese melts, the chicken is heated through, and the gnocchi is tender.
- Finish with Spinach
- Add fresh spinach to the skillet and stir gently until it wilts.
- Garnish with fresh basil leaves for a pop of flavor and color.
- Serve and Enjoy
- Taste and adjust the seasoning with more salt and pepper if needed.
