Ingredients

 

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 lb potato gnocchi
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)
  • 2 cups fresh spinach

Instructions

  1. Cook the Chicken
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add chicken pieces to the skillet and season with salt, pepper, and dried Italian herbs.
    • Cook for 6–8 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
    • Remove the chicken from the skillet and set aside.
  2. Sauté the Garlic
    • In the same skillet, add the minced garlic.
    • Sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Deglaze the Pan
    • Pour the chicken broth into the skillet and use a wooden spoon to scrape up any browned bits from the bottom.
    • These add incredible depth of flavor to your sauce.
  4. Cook the Gnocchi
    • Add the potato gnocchi to the skillet with the chicken broth.
    • Bring to a simmer and cook for 3–4 minutes, stirring occasionally, until the gnocchi begins to soften.
  5. Make the Creamy Sauce
    • Reduce the heat to medium-low and pour in the heavy cream.
    • Stir gently to combine, allowing the sauce to simmer for 2–3 minutes until it thickens slightly.
  6. Combine Ingredients
    • Return the cooked chicken to the skillet along with the grated Parmesan cheese.
    • Stir everything together until the cheese melts, the chicken is heated through, and the gnocchi is tender.
  7. Finish with Spinach
    • Add fresh spinach to the skillet and stir gently until it wilts.
    • Garnish with fresh basil leaves for a pop of flavor and color.
  8. Serve and Enjoy
    • Taste and adjust the seasoning with more salt and pepper if needed.
    • Serve the dish hot, garnished with extra Parmesan cheese if desired.
