Ingredients
- 1 cup natural peanut butter (smooth or crunchy)
- 1/2 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the peanut butter, honey (or maple syrup), egg, and vanilla extract. Mix until smooth and well combined.
- Add the baking soda and salt to the mixture, stirring until fully incorporated.
- Fold in the rolled oats and dark chocolate chips (if using) until evenly distributed.
- Using a tablespoon, scoop out portions of the dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of the spoon or your fingers.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a nut-free version, substitute peanut butter with sunflower seed butter.
- Add 1/4 cup of shredded coconut or chopped nuts for extra texture and flavor.
