Description

Ingredients
- ยฝ cup mashed ripe banana (about 1 medium banana)
- 1 large egg
- 2 tablespoons melted butter or coconut oil
- ยผ cup plain Greek yogurt
- ยฝ teaspoon vanilla extract
- ยพ cup white whole wheat flour (or all-purpose)
- ยฝ teaspoon baking powder
- ยผ teaspoon baking soda
- A pinch of salt (optional)
- ยฝ cup chopped fresh strawberries
Instructions
- Preheat oven to 350ยฐF (175ยฐC) and line a muffin tin with liners or grease lightly.
- In a bowl, mash the banana until smooth.
- Add egg, melted butter (or coconut oil), Greek yogurt, and vanilla extract; whisk until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gently mix dry ingredients into the wet ingredients until just combined (donโt overmix).
- Fold in the chopped strawberries.
- Divide batter into muffin cups, filling each ยพ full.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Use overripe bananas for natural sweetness.

- Toss strawberries in flour to prevent sinking.
