- Juice of 2 lemons (about ½ cup)
Instructions
Prepare the Crust
- Preheat the oven to 350°F (175°C).
- In a medium mixing bowl, combine the flour, softened butter, and sugar.
- Mix until the ingredients form a dough.
- Press the dough evenly into an ungreased 9×13-inch baking dish to form a solid crust.
- Bake in the preheated oven for 15 minutes, or until lightly golden.
2. Make the Filling
- In a separate mixing bowl, whisk together the sugar and flour.
- Add the eggs and lemon juice to the sugar-flour mixture. Whisk until smooth.
3. Assemble and Bake
- Pour the lemon filling evenly over the baked crust.
- Return the dish to the oven and bake for 20 minutes, or until the filling is set but slightly jiggly in the center.
4. Cool and Slice
- Let the bars cool completely in the baking dish to allow the filling to firm up.
- Slice into squares and dust with powdered sugar if desired.
Notes
- Use freshly squeezed lemon juice for the best flavor.
- Ensure the butter is softened for a cohesive crust texture.
- For clean slices, chill the bars in the fridge for 30 minutes before cutting.
