  • 6 ears fresh corn on the cob (kernels removed)

Instructions

  • Prepare the Corn:
    • Stand an ear of corn upright on a cutting board and use a sharp knife to slice the kernels off. Repeat for all ears of corn. Collect the kernels and any corn milk for added flavor.
  • Cook the Bacon:
    • Heat a large skillet over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes.
    • Transfer the bacon to a plate lined with paper towels, leaving the rendered bacon fat in the skillet.
  • Sauté the Corn:
    • In the same skillet, add the butter and let it melt.
    • Add the corn kernels and corn milk, stirring to coat them in the butter.
  • Combine and Season:
    • Stir the crispy bacon back into the skillet with the corn.
    • Sprinkle with freshly ground black pepper to taste. Add salt only if necessary, as the bacon provides natural saltiness.
  • Cook Until Tender:
    • Cook the mixture for 10-15 minutes over medium heat, stirring occasionally, until the corn is tender and lightly golden.
