Description

This Easy Cranberry Nut Bread combines tart cranberries, crunchy walnuts, and the bright zest of orange into a festive and flavorful loaf. Perfect for holiday mornings or gifting!

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup white sugar
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • 1 cup chopped cranberries
  • ½ cup chopped walnuts
  • ¾ cup orange juice
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1 tablespoon orange zest

Instructions

  • Preheat and Prepare: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  • Mix Dry Ingredients: In a large bowl, combine flour, sugar, baking powder, salt, and baking soda. Fold in cranberries and walnuts.
  • Mix Wet Ingredients: In a medium bowl, whisk together orange juice, egg, oil, and orange zest.
  • Combine: Pour wet ingredients into dry ingredients. Stir gently until just combined—don’t overmix.
  • Bake: Spoon batter into the prepared pan. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  • Cool and Serve: Let bread cool in the pan for 10 minutes, then transfer to a wire rack. Cool completely before slicing.

Notes

  • Use fresh cranberries for the best flavor; if using frozen, don’t thaw.
  • Overmixing the batter can make the bread dense. Stir until just combined.
  • Test doneness with a toothpick at the 45-minute mark.
