Description

These festive Easter Egg Fruit Pizzas are a fun and colorful treat, perfect for celebrating spring! A soft sugar cookie base, creamy frosting, and fresh fruit toppings make this a delightful and refreshing dessert.

Ingredients

For the Cookie Base:

  • 1 package sugar cookie dough mix (or your favorite homemade sugar cookie recipe)

For the Creamy Frosting:

  • 8 oz brick cream cheese, softened
  • 6 tbsp butter, softened
  • 2 cups confectioner’s sugar
  • 1 tsp vanilla extract
  • Pinch of salt

For the Toppings:

  • Assorted fresh fruit (blueberries, strawberries, raspberries, kiwis, mandarin oranges)

Instructions

  1. Shape & Bake – Preheat the oven according to your cookie dough instructions. Roll out the dough to about ¼-inch thickness and use an egg-shaped cookie cutter to cut out cookies. Bake according to the package or recipe directions. Let them cool completely on a wire rack before frosting.
  2. Prepare the Frosting – In a large bowl, mix softened cream cheese and butter with an electric mixer until light and fluffy. Add vanilla and a pinch of salt. Gradually add confectioner’s sugar, mixing well after each addition until smooth.
  3. Decorate with a Splash of Color – Chop berries and fruit into small pieces. Spread a thick layer of frosting over each cooled cookie. Arrange fruit in fun patterns to resemble beautifully decorated Easter eggs.
  4. Serve & Enjoy – Serve immediately or store in the fridge until ready to enjoy!

Notes

  • Use a variety of colorful fruits to create beautiful designs.
  • Make the cookies in advance and decorate just before serving for the freshest taste.
  • Substitute Greek yogurt for some of the cream cheese for a lighter frosting option.
