Ingredients
For the Cookie Base:
- 1 package sugar cookie dough mix (or your favorite homemade sugar cookie recipe)
For the Creamy Frosting:
- 8 oz brick cream cheese, softened
- 6 tbsp butter, softened
- 2 cups confectioner’s sugar
- 1 tsp vanilla extract
- Pinch of salt
For the Toppings:
- Assorted fresh fruit (blueberries, strawberries, raspberries, kiwis, mandarin oranges)
Instructions
- Shape & Bake – Preheat the oven according to your cookie dough instructions. Roll out the dough to about ¼-inch thickness and use an egg-shaped cookie cutter to cut out cookies. Bake according to the package or recipe directions. Let them cool completely on a wire rack before frosting.
- Prepare the Frosting – In a large bowl, mix softened cream cheese and butter with an electric mixer until light and fluffy. Add vanilla and a pinch of salt. Gradually add confectioner’s sugar, mixing well after each addition until smooth.
- Decorate with a Splash of Color – Chop berries and fruit into small pieces. Spread a thick layer of frosting over each cooled cookie. Arrange fruit in fun patterns to resemble beautifully decorated Easter eggs.
