Ingredients
- 2 medium yellow squash, sliced into 1/4-inch rounds
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup buttermilk
- Vegetable oil, for frying
Instructions
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
- In a shallow bowl, combine the flour, cornmeal, salt, black pepper, garlic powder, and onion powder. Mix well.
- Pour the buttermilk into another shallow bowl.
- Dip each squash slice into the buttermilk, allowing excess to drip off, then dredge in the flour mixture, ensuring an even coating.
- Once the oil is hot (about 350°F), carefully add the coated squash slices in batches, frying until golden brown and crispy, about 2-3 minutes per side.
- Remove the fried squash from the skillet and place on a paper towel-lined plate to drain excess oil.
- Serve warm as a side dish or snack.
Notes
- For extra flavor, try adding a pinch of cayenne pepper to the flour mixture.
- You can also substitute zucchini for the yellow squash for a different twist.
