Ingredients

  • 8 egg roll wrappers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices of cooked bacon, crumbled
  • 2 fresh jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil (enough for deep frying)

Instructions

  • Prepare the Filling:
    • In a large mixing bowl, combine the cream cheese, cheddar cheese, crumbled bacon, chopped jalapeños, green onion, garlic powder, salt, and pepper. Mix until well combined.
  • Assemble the Eggrolls:
    • Lay an egg roll wrapper flat on a clean surface with one corner pointing toward you like a diamond.
    • Spoon about 2 tablespoons of the filling into the center of the wrapper.
    • Fold the bottom corner over the filling, then fold in the sides like an envelope. Roll tightly, brushing the top corner with water to seal. Repeat with remaining wrappers and filling.
  • Heat the Oil:
    • Pour vegetable oil into a large skillet or deep fryer, filling it about 2-3 inches deep. Heat to 350°F.
  • Fry the Eggrolls:
    • Fry the eggrolls in batches, 2-3 at a time, for 2-3 minutes on each side, or until golden brown.
    • Remove using a slotted spoon and transfer to a plate lined with paper towels to drain.
  • Serve:
    • Let the eggrolls cool slightly before serving. Pair with dipping sauces like ranch, chipotle mayo, or sweet chili sauce for an extra kick.
