Description
A refreshing and flavorful dish featuring crispy cucumbers coated in a spicy peanut sauce, perfect as a side or appetizer.
Ingredients
- 2 large cucumbers, sliced into rounds
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sriracha (or more to taste)
- 1 clove garlic, minced
- 1 tablespoon chopped fresh cilantro (for garnish)
- 1 tablespoon chopped peanuts (for garnish)
Instructions
- In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, sriracha, and minced garlic until smooth and well combined.
- Taste the sauce and adjust the spiciness by adding more sriracha if desired.
- In a large bowl, combine the sliced cucumbers with the spicy peanut sauce. Toss until the cucumbers are evenly coated.
- Let the cucumbers marinate in the sauce for at least 15 minutes to allow the flavors to meld.
- Serve the cucumbers in a dish, garnished with chopped cilantro and peanuts.
Notes
- For added crunch, include sliced bell peppers or shredded carrots in the cucumber mix.
- Substitute almond butter for peanut butter for a different flavor profile, or use a nut-free alternative like sunflower seed butter for a nut-free version.
