Ingredients
- 2 cups cucumber, diced
- 1 cup shelled edamame (fresh or frozen, thawed)
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup rice vinegar
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced cucumber, edamame, cherry tomatoes, red onion, and cilantro.
- In a separate small bowl, whisk together the rice vinegar, olive oil, soy sauce, honey, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.

- For added crunch, include 1/2 cup of chopped bell peppers or radishes.
