Ingredients

  • 2 cups cucumber, diced
  • 1 cup shelled edamame (fresh or frozen, thawed)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup rice vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced cucumber, edamame, cherry tomatoes, red onion, and cilantro.
  2. In a separate small bowl, whisk together the rice vinegar, olive oil, soy sauce, honey, salt, and pepper until well combined.
