Description

This Chicken Parmesan is everything you want in a comforting Italian classic—crispy golden chicken cutlets smothered in marinara and bubbling mozzarella. It’s oven-baked for a gooey, melty finish and perfect over pasta or in a toasted sandwich roll.


Ingredients

2 large chicken breasts (about 1.5 lbs), sliced lengthwise into 4 cutlets
½ cup all-purpose flour
1 tsp salt
½ tsp black pepper
2 large eggs, beaten until frothy
½ cup Italian seasoned bread crumbs
½ cup parmesan cheese, shredded or grated
2 Tbsp light olive oil
24 oz marinara sauce, homemade or store-bought
4 oz mozzarella cheese (about 1 cup shredded)
1 Tbsp fresh basil or parsley, chopped (optional garnish)


Instructions

  1. Slice the chicken breasts in half lengthwise to create 4 thin cutlets. Pound to about ⅓-inch thick between two sheets of plastic wrap. Season both sides with salt and pepper.

  2. Set up three shallow bowls: mix flour, salt, and pepper in the first; beat eggs in the second; combine breadcrumbs and parmesan in the third.

  3. Dredge each chicken cutlet in the flour, dip into the eggs, then press into the breadcrumb mixture to coat well.

  4. Heat olive oil in a large non-stick skillet over medium heat. Cook chicken cutlets for 3–4 minutes per side until golden and fully cooked (165°F internal temp). Avoid overcrowding the pan.

  5. Pour 1½ cups of marinara sauce into a 9×13 inch baking dish. Lay the cooked chicken cutlets over the sauce in a single layer. Spoon the remaining sauce over the top and sprinkle with shredded mozzarella.

  6. Bake uncovered at 425°F for 15 minutes until the cheese is melted and bubbly.

  7. Garnish with chopped fresh basil or parsley and serve hot over pasta or on a sandwich roll.

Notes

Use thin-sliced chicken or pound them evenly for quick, even cooking.
Italian-style breadcrumbs add the best flavor, but plain can be used with added Italian seasoning.
Feel free to swap in provolone or a mozzarella-parmesan mix for extra cheesy flavor.
