This cozy and creamy Ground Beef Stroganoff is the ultimate pantry-friendly comfort food. Featuring tender egg noodles, seasoned beef, and a velvety homemade sauce, it’s a hearty one-skillet dinner that comes together in no time—perfect for busy weeknights or no-fuss family meals.


Ingredients

6 oz egg noodles
1 lb ground beef
¼ cup butter
¼ cup all-purpose flour
1 cup beef broth
1¼ cup milk
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon ground black pepper
1 teaspoon salt
¼ cup sour cream (or Greek yogurt as a substitute)


Instructions

  • Cook the Noodles:
    Bring a pot of salted water to a boil. Cook the egg noodles for 2 minutes less than package directions suggest. Do not rinse. Set aside.

  • Brown the Beef:
    In a large skillet over medium heat, cook ground beef until fully browned with no pink remaining. Drain excess grease and set the beef aside.

  • Make a Roux:
    In the same skillet, melt butter over medium heat. Whisk in the flour and cook, stirring constantly, for about 2 minutes to form a roux.

  • Add the Liquids:
    Slowly pour in the beef broth while whisking to avoid lumps. Once the sauce begins to thicken, add the milk and continue whisking until the mixture is smooth and creamy.

  • Season the Sauce:
    Stir in garlic powder, onion powder, salt, and black pepper until well combined.

  • Combine Everything:
    Reduce heat to low. Add the cooked noodles and browned beef back into the skillet. Stir gently to coat everything in the creamy sauce.

  • Finish with Sour Cream:
    Remove the skillet from heat and stir in the sour cream until fully incorporated.

 

  • Serve & Enjoy:
    Serve warm with steamed vegetables or garlic toast for a complete meal.

Notes

  • For a lighter version, substitute milk with unsweetened almond milk and use Greek yogurt instead of sour cream.

  • Ground turkey or chicken can be used in place of beef for a leaner option.

  • Add sautéed mushrooms for a more traditional Stroganoff flair.
