Description
A delicious and creamy oatmeal recipe that combines rolled oats with eggs and milk for a custard-like texture.
Ingredients
- 1 cup rolled oats
- 2 cups milk (or almond milk for a dairy-free option)
- 2 large eggs
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup raisins or chopped nuts (optional)
- Fresh fruit for topping (such as sliced bananas or berries)
Instructions
- In a medium saucepan, combine the rolled oats and milk. Bring to a gentle boil over medium heat, stirring occasionally.
- Once boiling, reduce the heat to low and simmer for about 5 minutes, or until the oats are tender and the mixture is creamy.
- In a separate bowl, whisk together the eggs, brown sugar, vanilla extract, cinnamon, and salt until well combined.
- Gradually stir the egg mixture into the oatmeal, cooking for an additional 2-3 minutes until the mixture thickens slightly.
- If desired, stir in raisins or chopped nuts for added texture.
- Remove from heat and let cool for a minute before serving. Top with fresh fruit as desired.
Notes
- For a creamier texture, use half-and-half instead of milk.
- Experiment with different spices like nutmeg or cardamom for a unique flavor twist.
