Ingredients

Main Ingredients:

  • 12 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can tomato sauce
  • 3 ounces (¼ cup) tomato paste
  • 4 cups chicken broth
  • 12 cups water (as needed)

Seasonings & Flavor Enhancers:

  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt (or to taste)
  • Black pepper to taste

Pasta & Cheesy Toppings:

  • 8 ounces bowtie pasta (or pasta of choice)
  • ½ cup ricotta cheese
  • ½ cup mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ¼ cup fresh parsley, chopped

Instructions

Sauté the Beef & Aromatics:

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it apart as it cooks.
  • Stir in diced onions and minced garlic, cooking for 2-3 minutes until fragrant.

2️⃣ Build the Soup Base:

  • Add diced tomatoes, tomato sauce, and tomato paste.
  • Pour in chicken broth and water.
  • Stir in Italian seasoning, salt, and black pepper.
  • Simmer for 15-20 minutes to develop the flavors.

3️⃣ Cook the Pasta:

  • Add uncooked bowtie pasta directly to the soup.
  • Simmer for 8-10 minutes until pasta is tender.

4️⃣ Finish with Cheese:

  • Remove from heat and stir in ricotta cheese.
  • Sprinkle mozzarella and Parmesan on top, allowing it to melt.
  • Garnish with fresh parsley and serve hot!

Notes

  • For a creamier texture, stir in a splash of heavy cream or mascarpone cheese.
  • To thicken the soup, simmer longer or add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
  • Make it spicy by adding red pepper flakes or hot sauce.
  • For a vegetarian version, swap the beef for mushrooms or lentils.
