Description

A delightful recipe for making fluffy cotton candy flavored marshmallows that are perfect for a sweet treat.


Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cotton candy flavoring (optional)
  • 1 tablespoon powdered sugar (for dusting)
  • 1 tablespoon cornstarch (for dusting)
  • Cooking spray (for greasing)

Instructions

  1. In a medium saucepan, combine granulated sugar, corn syrup, water, and salt. Place over medium heat and stir until the sugar dissolves. Bring the mixture to a boil without stirring, and cook until it reaches 240°F on a candy thermometer (soft-ball stage). Remove from heat.
  2. While the sugar mixture is cooking, prepare a 9×9-inch baking dish by greasing it with cooking spray. In a small bowl, mix powdered sugar and cornstarch together and dust the bottom and sides of the dish with the mixture.
  3. In a large mixing bowl, use an electric mixer to beat the egg whites until stiff peaks form. Slowly pour the hot sugar mixture into the egg whites while continuing to beat on medium speed. Add vanilla extract and cotton candy flavoring (if using) and beat on high speed for about 10-12 minutes, until the mixture is thick and glossy.
  4. Pour the marshmallow mixture into the prepared baking dish, spreading it evenly with a spatula. Dust the top with more of the powdered sugar and cornstarch mixture. Let it sit at room temperature for at least 4 hours or until fully set.
  5. Once set, dust a clean surface with the powdered sugar and cornstarch mixture. Turn the marshmallow slab out onto the surface and cut it into squares. Dust the cut edges with more of the mixture to prevent sticking.
  6. Store the marshmallows in an airtight container at room temperature for up to 2 weeks.
