Ingredients
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh spinach
- 1/4 cup diced bell pepper (any color)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 4 large lettuce leaves (romaine or iceberg)
- 1 tablespoon olive oil (optional)
Instructions
- In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, chopped spinach, diced bell pepper, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.
- Lay out the large lettuce leaves on a clean surface. If desired, drizzle a little olive oil on each leaf for added flavor.
- Spoon a generous amount of the cottage cheese mixture onto each lettuce leaf.
- Roll the lettuce leaves around the filling to create wraps. Secure with a toothpick if necessary.
- Serve immediately or refrigerate for up to 30 minutes before serving for a chilled option.
