Coconut Vanilla Panna Cotta is a creamy and delicious dessert made with coconut milk and heavy cream, flavored with vanilla and sweetened with sugar.
Ingredients
- 1 cup coconut milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 packet (2 1/4 teaspoons) unflavored gelatin
- 3 tablespoons cold water
- Pinch of salt
Instructions
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes until it blooms.
- In a saucepan over medium heat, combine the coconut milk, heavy cream, sugar, vanilla extract, and salt. Stir until the sugar dissolves and the mixture is warm but not boiling.
- Remove the saucepan from heat and add the bloomed gelatin, stirring until completely dissolved.
- Pour the mixture into individual serving cups or ramekins.
- Refrigerate for at least 4 hours or until set.
- Once set, serve chilled. You can garnish with toasted coconut flakes or fresh fruit if desired.
Notes
- For a tropical twist, add a layer of mango puree on top before serving.
- Substitute almond milk for coconut milk for a different flavor profile while keeping it dairy-free.
