Ingredients

  • 2 cups sweetened shredded coconut
  • 2 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 cup brewed Thai iced tea, cooled
  • 1/4 cup sweetened condensed milk
  • 1/4 cup coconut milk
  • Ice cubes

Instructions

  1. Preheat your oven to 325°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, egg whites, granulated sugar, vanilla extract, and almond extract. Mix until well combined.
  3. Using a tablespoon or cookie scoop, drop rounded mounds of the coconut mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  4. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Remove from the oven and let cool completely on the baking sheet.
  5. While the macarons are cooling, prepare the Thai iced tea. In a glass, combine the brewed Thai iced tea with sweetened condensed milk and coconut milk. Stir well to combine.
  6. Fill a glass with ice cubes and pour the Thai iced tea mixture over the ice.
  7. Serve the coconut macarons alongside the Thai iced tea for a delightful treat.
