Description

Bright, zesty, and bursting with fresh flavor, this Shrimp Ceviche is the ultimate no-cook appetizer or light meal. Marinated in lime juice and tossed with juicy tomatoes, creamy avocado, red onion, and cilantro, it’s refreshing, satisfying, and perfect for summer days or any time you’re craving something vibrant and healthy!


Ingredients

1 pound shrimp (raw or cooked, peeled and deveined)
¾ cup fresh lime juice (about 6 to 8 large limes)
1 large tomato, diced
1 large avocado, diced
½ cup red onion, minced
½ cup fresh cilantro, minced
1 jalapeño, seeded and diced
Salt and pepper, to taste (about ½ teaspoon salt recommended)


Instructions

  1. Prep the Shrimp:
    If using frozen shrimp, thaw by soaking in warm water for 10 minutes. Drain well and gently pat dry.

  2. Dice the Shrimp:
    Halve small shrimp lengthwise or quarter larger shrimp, then finely dice into small pieces.

  3. Marinate in Lime Juice:
    Place diced shrimp in a bowl and cover with lime juice.

    • For cooked shrimp, marinate for 15 minutes.

    • For raw shrimp, marinate for 1.5 to 2 hours, or until shrimp turns pink and opaque.

  4. Chop the Veggies:
    Dice tomato, avocado, onion, cilantro, and jalapeño. Dice avocado last to keep it fresh and vibrant.

  5. Combine and Season:
    Add all chopped vegetables to the marinated shrimp and gently stir to combine. Season with salt and pepper to taste.
    Tip: Taste with a tortilla chip before adding more salt.

  6. Serve Chilled:
    Serve immediately or chill in the fridge until ready to serve. Best enjoyed with tortilla chips, on tostadas, or as a taco filling.

Notes

  • Use fresh lime juice for the best flavor and proper “cooking” of raw shrimp.

  • Make it spicier by keeping some of the jalapeño seeds or adding a dash of hot sauce.

  • For meal prep, chop veggies in advance but add avocado just before serving to prevent browning.
