Ingredients

  • 15 oz. Circus Animal Cookies
  • 8 oz. cream cheese
  • 12 oz. pink candy melts
  • 10 oz. white candy melts
  • 1/2 cup bright pink candy melts
  • Rainbow sprinkles

Instructions

  1. Crush the Cookies – Using a food processor, blend the Circus Animal Cookies into fine crumbs. Alternatively, place them in a sealed bag and crush with a rolling pin.
  2. Mix the Dough – In a large mixing bowl, combine the crushed cookies with cream cheese, mixing until a dough forms.
  3. Shape the Truffles – Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Chill the Truffles – Refrigerate for at least 20 minutes to firm up.
  5. Melt the Coating – Melt pink and white candy melts separately in microwave-safe bowls, heating in 30-second intervals and stirring between each.
  6. Dip the Truffles – Coat half of the truffles in pink melts and the other half in white melts. Let excess drip off before placing them back on the tray.
  7. Decorate – Sprinkle rainbow sprinkles onto the pink-coated truffles while the coating is still wet. Drizzle bright pink melted candy over the white-coated truffles for an extra decorative touch.
  8. Set & Serve – Allow the truffles to fully set at room temperature, or chill in the fridge for quicker setting.
