Delicious and juicy chicken skewers, perfect for grilling and packed with flavor.
Ingredients
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1/4 cup fresh parsley, chopped
- Wooden skewers, soaked in water for 30 minutes
Instructions
- Cut the chicken into 1-inch cubes and set aside.
- In a large bowl, combine the bread crumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.
- In another bowl, whisk together the olive oil and lemon juice.
- Preheat your grill or grill pan over medium-high heat.
- Thread the chicken cubes onto the soaked skewers, leaving a little space between each piece.
- Brush the skewers with the olive oil and lemon juice mixture, then roll them in the bread crumb mixture until well coated.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and sprinkle with fresh parsley before serving.
Notes
- For a spicier kick, add red pepper flakes to the bread crumb mixture.
- You can also substitute chicken with shrimp or vegetables like bell peppers and zucchini for a different twist.
