Ingredients
- 2 cups orzo pasta
- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the broccoli florets and cook for 2-3 minutes until they start to soften.
- Add the orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
- Cover and cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
- Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
- Serve hot, garnished with fresh parsley.
Notes
- For a creamier version, stir in 1/4 cup of heavy cream just before serving.
- You can substitute the chicken sausage with turkey sausage or a plant-based sausage for a different flavor profile.
