Description

Imagine the warmth of a cozy blanket on a cold winter night, the smell of rich chocolate filling the air, and the soft, gooey texture of melted marshmallows as you take a bite of a freshly baked cookie. These Chewy Hot Chocolate Cookies with Melty Marshmallows bring all the comforting flavors of hot chocolate into a delightful cookie form.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini marshmallows
  • 1/2 cup chocolate chips (optional)

Instructions

  • Preparation
    • Preheat the oven to 350°F (175°C).
    • Line your baking sheets with parchment paper or silicone baking mats.
  • Mixing the Dough
    • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
    • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
    • In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
    • Gradually add the dry ingredients to the butter mixture, stirring until just combined. Do not overmix.
    • If using, fold in the chocolate chips.
  • Forming the Cookies
    • Use a tablespoon or cookie scoop to scoop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Gently press a few mini marshmallows into the top of each cookie dough ball.
  • Baking
    • Bake for 10-12 minutes, or until the edges are set and the centers are still soft.
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Use room-temperature butter: It blends more evenly with the sugars, creating a smooth, creamy dough that bakes into a soft, chewy cookie.
  • Don’t overmix the dough: Overmixing can cause the cookies to become tough. Mix until just combined to preserve that tender texture.
  • Experiment with different chocolate chips: Dark chocolate or white chocolate chips can add a unique twist to your cookies.
