A delicious twist on a classic Caesar salad featuring cheese tortellini.
Ingredients
- 8 ounces cheese tortellini
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/2 cup Caesar dressing
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup croutons (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the cheese tortellini according to package instructions. Drain and rinse under cold water to cool. Set aside.
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, and cooked tortellini.
- Add the Caesar dressing, grated Parmesan cheese, black pepper, and garlic powder to the salad. Toss gently until everything is well coated.
- If using, sprinkle croutons on top for added crunch.
- Garnish with fresh parsley before serving.
Notes
- For a protein boost, add grilled chicken or shrimp to the salad.
- Substitute the Caesar dressing with a light vinaigrette for a healthier option.
