Ingredients
4 cups yellow squash, sliced
1 small onion, finely chopped
1 tablespoon butter
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg, beaten
1 cup crushed Ritz crackers (for topping)
2 tablespoons melted butter (for topping)
Instructions
-
Preheat your oven to 350°F (175°C).
-
In a skillet, sauté the sliced squash and chopped onion in 1 tablespoon of butter over medium heat for 5 to 7 minutes, or until the vegetables are softened.
-
Transfer the cooked squash mixture to a large mixing bowl. Add the shredded cheddar cheese, sour cream, salt, pepper, and beaten egg. Stir until everything is evenly combined.
-
Pour the squash mixture into a greased 8×8-inch baking dish and spread evenly.
-
In a small bowl, mix the crushed crackers with the melted butter. Sprinkle this buttery crumb topping evenly over the casserole.
-
Bake for 25 to 30 minutes, or until the topping is golden and the casserole is bubbly.
-
Let cool for 5 minutes before serving.
Notes
-
This casserole works great with a mix of yellow squash and zucchini.
-
For extra flavor, add a pinch of garlic powder or a handful of chopped fresh herbs.
-
Make it ahead: Assemble the casserole up to a day in advance and refrigerate until ready to bake.
-
You can swap Ritz crackers with crushed cornflakes or panko breadcrumbs for a different topping texture.
