Ingredients

Lasagna Layers:

  • Lasagna noodles, cooked al dente

Savory Chicken Mix:

  • 2 cups cooked chicken, shredded or chopped
  • 3 cups Alfredo sauce

Sautéed Mushroom Goodness:

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 pound white mushrooms, sliced
  • Salt and pepper to taste

Creamy Ricotta Blend:

  • 1 large egg
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese (divided)
  • 1 teaspoon Italian seasoning

Cheesy Finale:

  • 2 cups shredded mozzarella cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat & Prep – Set oven to 350°F and grease a 9×13-inch baking dish.
  2. Sauté the Veggies – Heat olive oil in a skillet over medium heat. Cook onions and garlic until soft. Add mushrooms and sauté until tender. Season with salt and pepper.
  3. Prepare the Chicken Sauce – In a bowl, combine Alfredo sauce with cooked chicken.
  4. Mix the Ricotta Blend – In another bowl, mix ricotta, egg, ½ cup Parmesan, and Italian seasoning.
  5. Start Layering – Spread a thin layer of chicken Alfredo sauce in the baking dish. Add three lasagna noodles.
  6. Add Fillings – Spread half of the ricotta mixture, then half of the mushrooms, followed by a third of the mozzarella.
  7. Repeat Layers – Add another set of noodles, remaining ricotta mixture, mushrooms, and another third of mozzarella.
  8. Final Touches – Top with last layer of noodles, remaining Alfredo sauce, mozzarella, and Parmesan.
  9. Bake to Perfection – Cover with foil and bake for 40 minutes. Remove foil and bake for another 20 minutes until cheese is bubbly and golden.
  10. Rest & Serve – Let lasagna sit for 10 minutes before slicing. Garnish with parsley and serve hot.
