Delicious and easy-to-make Cheesy Cottage Cheese Egg Bites, perfect for a healthy breakfast or snack.
Ingredients
- 1 cup cottage cheese
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers (any color)
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 350°F. Grease a muffin tin with cooking spray or oil.
- In a large mixing bowl, combine the cottage cheese and eggs. Whisk until well blended.
- Stir in the shredded cheddar cheese, diced bell peppers, green onions, garlic powder, onion powder, salt, black pepper, and paprika (if using). Mix until all ingredients are evenly distributed.
- Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let cool for a few minutes before gently running a knife around the edges to release the bites from the muffin tin.
- Serve warm or allow to cool completely and store in an airtight container in the refrigerator for up to 4 days.
Notes
- For a creamier texture, blend the cottage cheese before mixing it with the eggs.
- Add cooked bacon or sausage for extra flavor and protein.
- You can also substitute the cheddar cheese with feta or mozzarella for a different taste.
