Ingredients

  • Cupcakes (store-bought or homemade)
  • Blue buttercream frosting
  • White buttercream frosting
  • AirHeads Xtremes Rainbow Candy (cut in half)
  • Rolos (chocolate caramel candies)
  • Gold coarse shimmer sugar (or gold sprinkles)
  • Piping bag
  • Pastry tip with a 1/4 to 1/2 inch opening (Wilton 1A recommended)

Instructions

  1. Create the Sky – Frost each cupcake with blue buttercream frosting to represent the sky.
  2. Add the Clouds – Using a piping bag with a round tip, pipe fluffy white frosting onto both sides of the cupcake. This will act as the base for the rainbow.
  3. Build the Rainbow – Cut AirHead Xtremes in half and gently press the ends into the white frosting to create a rainbow arch. Make sure the candy isn’t too long to prevent sagging.
  4. Make the Pot of Gold – Pipe a small amount of white frosting onto the bottom of a Rolo candy. Dip the frosting-covered part into gold coarse shimmer sugar to create a glittery gold effect.
  5. Place the Gold at the End of the Rainbow – Position the Rolo at one end of the rainbow, nestled into the white frosting.
  6. Enjoy Your Magical Creation – Serve and celebrate with these fun and festive cupcakes!
