Ingredients
- Cupcakes (store-bought or homemade)
- Blue buttercream frosting
- White buttercream frosting
- AirHeads Xtremes Rainbow Candy (cut in half)
- Rolos (chocolate caramel candies)
- Gold coarse shimmer sugar (or gold sprinkles)
- Piping bag
- Pastry tip with a 1/4 to 1/2 inch opening (Wilton 1A recommended)
Instructions
- Create the Sky – Frost each cupcake with blue buttercream frosting to represent the sky.
- Add the Clouds – Using a piping bag with a round tip, pipe fluffy white frosting onto both sides of the cupcake. This will act as the base for the rainbow.
- Build the Rainbow – Cut AirHead Xtremes in half and gently press the ends into the white frosting to create a rainbow arch. Make sure the candy isn’t too long to prevent sagging.
- Make the Pot of Gold – Pipe a small amount of white frosting onto the bottom of a Rolo candy. Dip the frosting-covered part into gold coarse shimmer sugar to create a glittery gold effect.
- Place the Gold at the End of the Rainbow – Position the Rolo at one end of the rainbow, nestled into the white frosting.
