Ingredients

4 to 5 pounds beef brisket
2 large yellow onions, thinly sliced
6 cloves garlic, minced
1/2 cup brown sugar
1/4 cup soy sauce
1 cup beef broth
1/4 cup apple cider vinegar
1 tablespoon smoked paprika
1 tablespoon ground cumin
1 tablespoon black pepper
1 teaspoon salt


Instructions

  1. Trim excess fat from the brisket, leaving about 1/4 inch for moisture. In a small bowl, mix smoked paprika, cumin, black pepper, and salt. Rub the seasoning mixture all over the brisket.

  2. In a large skillet, heat a drizzle of oil over medium heat. Sauté the sliced onions for 15 to 20 minutes, stirring occasionally, until caramelized. Add the minced garlic and cook for another 2 to 3 minutes until fragrant.

  3. In a slow cooker or Dutch oven, layer the caramelized onions and garlic at the bottom. Place the seasoned brisket on top.

  4. In a bowl, whisk together the brown sugar, soy sauce, beef broth, and apple cider vinegar. Pour the mixture over the brisket.

  5. Cover and cook:

    • Slow Cooker: Cook on low for 8 to 10 hours until fork-tender.

    • Dutch Oven: Bake covered at 300°F (150°C) for 3 to 4 hours.

  6. Let the brisket rest for 20 minutes before shredding it with two forks. Mix the shredded meat with some of the cooking juices for extra flavor.

  7. Optional: For crispy edges, pan-fry the shredded brisket in a skillet with a little of the cooking liquid for 5 to 10 minutes before serving.
