Ingredients
1 pound lean ground beef
5 cups green cabbage, shredded or chopped
¼ cup low-carb taco seasoning
1 tablespoon dry minced onion (or substitute with fresh chopped onion)
¼ cup water
1½ cups shredded cheddar cheese (or a blend with mozzarella or pepper jack)
Instructions
-
Brown the Ground Beef
In a large skillet over medium heat, cook the ground beef until fully browned. Drain any excess fat. -
Add Cabbage and Seasoning
Stir in the cabbage, taco seasoning, dry onion, and water. Mix thoroughly to combine. -
Cook Until Tender
Continue cooking, stirring occasionally, for about 8–10 minutes or until the cabbage is crisp-tender. -
Add the Cheese
Sprinkle the shredded cheese evenly over the top. Cover the skillet with a lid and let it cook for 5–10 minutes, or until the cheese is melted and bubbly.
-
Serve and Enjoy
Serve hot, straight from the skillet. Add your favorite taco toppings if desired.
Notes
-
A bag of pre-shredded coleslaw mix works great for a shortcut.
-
Customize with extras like jalapeños, diced peppers, or even black olives.
-
Swap the beef for ground turkey or spicy sausage to switch up the flavor.
-
Toppings like sour cream, diced avocado, salsa, or chopped tomatoes add even more flair.
