Ingredients
- 2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar, packed
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1/2 cup almond milk (or any milk of choice)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, salt, baking powder, and cinnamon. Mix well.
- In a separate bowl, whisk together the melted butter, honey (or maple syrup), vanilla extract, and almond milk until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- Spread the mixture evenly into the prepared baking pan, pressing it down firmly.
- Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cooled, cut into squares.
Notes
- For added texture, mix in 1/2 cup of chopped nuts or seeds.
- Substitute the blueberries with other berries or chopped fruits like strawberries or apples for different flavors.
