Ingredients

  • 2 cups cooked brown rice
  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand)
  • 1 tablespoon ranch seasoning mix
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed and drained)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and ranch seasoning mix.
  2. Grill the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F. Remove from heat and let it rest for 5 minutes before slicing.
  3. In a large bowl, combine the cooked brown rice, corn, black beans, and cherry tomatoes. Mix well and season with salt and pepper to taste.
  4. To assemble the bowls, divide the rice mixture among four bowls. Top each with sliced grilled chicken, diced avocado, and shredded cheddar cheese.
