Description

Experience creamy, tangy, and savory flavors in every bite with this easy Baked Feta Pasta recipe! Roasted cherry tomatoes, melted feta, and fresh basil create a rich, luscious sauce that perfectly coats tender pasta for a dish that’s both effortless and irresistible.


Ingredients

2 pints cherry tomatoes
8 oz block feta cheese
3 cloves garlic
½ cup olive oil
⅓ cup fresh basil leaves, chopped (plus more for serving)
Salt and pepper, to taste
2 teaspoons oregano
Pasta (cavatappi preferred, around 12 oz recommended)


Instructions

  • Preheat the oven to 400°F (200°C).

  • Place the cherry tomatoes in an oven-safe baking dish. Drizzle with half of the olive oil, season with salt, pepper, and oregano, and toss to coat.

  • Make a space in the center of the dish and place the block of feta cheese. Drizzle the remaining olive oil over the feta and sprinkle additional seasoning if desired.

  • Scatter the garlic cloves around the tomatoes.

  • Bake uncovered for 30 to 35 minutes until the feta is soft and the tomatoes are bursting.

  • While the tomatoes and feta bake, cook the pasta according to the package instructions. Drain and set aside.

  • Once baked, sprinkle chopped basil over the tomato and feta mixture. Mash everything together with a spoon to form a creamy sauce.

  • Add the cooked pasta directly into the baking dish and toss well until the pasta is fully coated in the creamy feta-tomato sauce.

 

  • Garnish with additional fresh basil before serving, if desired.

Notes

  • Use good quality feta cheese (preferably Greek) for the creamiest results.

  • Cavatappi is recommended for its ability to hold onto the rich sauce, but penne or rigatoni are excellent substitutes.

  • Add red pepper flakes for a spicy kick or stir in baby spinach at the end for extra greens.

  • For an even richer flavor, try roasting the garlic separately until caramelized.
