Ingredients
For the Tacos
- 1 pound ground beef
- 1 small white onion, diced
- 3 garlic cloves, minced
- 2 tablespoons taco seasoning
- 3 tablespoons tomato paste
- 1 can (4 oz) diced green chiles
- 1 teaspoon salt
- 1 can refried beans
- Tortillas (grain-free, flour, or corn)
- Avocado or olive oil spray
For Garnishes
- Shredded iceberg lettuce
- Diced tomatoes
- Chopped cilantro
- Jalapeño crema (see recipe below)
Instructions
1. Prepare Ingredients
- Dice the onion, mince the garlic, and preheat your oven to 400°F (200°C).
2. Cook the Ground Beef
- Heat a large skillet over medium heat. Add ground beef and diced onion, breaking up the meat as it cooks.
- Once browned (about 7 minutes), drain excess grease, leaving about 1-2 tablespoons in the pan.
3. Season the Meat
- Add garlic, taco seasoning, and salt. Cook for 1 minute.
- Stir in tomato paste and diced green chiles. Mix well and cook for 5-7 minutes until the flavors meld together.
4. Prepare Beans and Tortillas
- Heat the refried beans in a small saucepan until smooth.
- Warm the tortillas on a skillet or in the microwave to make them pliable.
5. Assemble Tacos
- Spread a thin layer of refried beans on half of each tortilla.
- Add about ¼ cup of the ground beef mixture on top. Fold each tortilla in half.
6. Bake
- Place the folded tacos on a parchment-lined baking sheet. Lightly spray with avocado or olive oil spray.
- Cover with another baking sheet to keep tacos flat and bake for 13-15 minutes.
- For crispier tacos, remove the top baking sheet and broil for 2 minutes, watching closely.
7. Garnish and Serve
- Top with shredded lettuce, diced tomatoes, cilantro, and jalapeño crema. Serve immediately.
