Ingredients

For the Tacos

  • 1 pound ground beef
  • 1 small white onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons taco seasoning
  • 3 tablespoons tomato paste
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon salt
  • 1 can refried beans
  • Tortillas (grain-free, flour, or corn)
  • Avocado or olive oil spray

For Garnishes

  • Shredded iceberg lettuce
  • Diced tomatoes
  • Chopped cilantro
  • Jalapeño crema (see recipe below)

Instructions

1. Prepare Ingredients

  • Dice the onion, mince the garlic, and preheat your oven to 400°F (200°C).

2. Cook the Ground Beef

  • Heat a large skillet over medium heat. Add ground beef and diced onion, breaking up the meat as it cooks.
  • Once browned (about 7 minutes), drain excess grease, leaving about 1-2 tablespoons in the pan.

3. Season the Meat

  • Add garlic, taco seasoning, and salt. Cook for 1 minute.
  • Stir in tomato paste and diced green chiles. Mix well and cook for 5-7 minutes until the flavors meld together.

4. Prepare Beans and Tortillas

  • Heat the refried beans in a small saucepan until smooth.
  • Warm the tortillas on a skillet or in the microwave to make them pliable.

5. Assemble Tacos

  • Spread a thin layer of refried beans on half of each tortilla.
  • Add about ¼ cup of the ground beef mixture on top. Fold each tortilla in half.

6. Bake

  • Place the folded tacos on a parchment-lined baking sheet. Lightly spray with avocado or olive oil spray.
  • Cover with another baking sheet to keep tacos flat and bake for 13-15 minutes.
  • For crispier tacos, remove the top baking sheet and broil for 2 minutes, watching closely.

7. Garnish and Serve

  • Top with shredded lettuce, diced tomatoes, cilantro, and jalapeño crema. Serve immediately.
