Description

Almond Joy Energy Bites are a delicious and easy-to-make snack that combines the flavors of chocolate, coconut, and almonds.


Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped almonds
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, honey (or maple syrup), dark chocolate chips, chopped almonds, vanilla extract, and salt.
  2. Mix all the ingredients together until well combined. You may need to use your hands to ensure everything is evenly mixed.
  3. Once combined, refrigerate the mixture for about 30 minutes to make it easier to handle.
  4. After chilling, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is formed into bites.
  5. Store the energy bites in an airtight container in the refrigerator for up to one week.
