Almond Joy Energy Bites are a delicious and easy-to-make snack that combines the flavors of chocolate, coconut, and almonds.
Ingredients
- 1 cup rolled oats
- 1 cup unsweetened shredded coconut
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup dark chocolate chips
- 1/4 cup chopped almonds
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the rolled oats, shredded coconut, almond butter, honey (or maple syrup), dark chocolate chips, chopped almonds, vanilla extract, and salt.
- Mix all the ingredients together until well combined. You may need to use your hands to ensure everything is evenly mixed.
- Once combined, refrigerate the mixture for about 30 minutes to make it easier to handle.
- After chilling, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is formed into bites.
- Store the energy bites in an airtight container in the refrigerator for up to one week.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- Add a pinch of cinnamon or a tablespoon of chia seeds for extra flavor and nutrition.
